The general movement towards dryer wines, together with the habit of drinking champagne as an apéritif, has popularised the cosumption of Brut. However, many wine-lovers still enjoy the softness and the gentle reminder of past pleasures provided by a Demi-Sec.

The blend is made of wines from more than 55 crus or villages, with an average vineyard rating of an impressive 94%. At least 10%, and sometimes over 20% of reserve wines are also used to ensure perfect consistency in the Demi-Sec. Aged for at least three years. The wine is then dosed with a liqueur made up from cane sugar dissolved in wine from the same cuvée. The dosage is 40 grams per litre.

The Demi-Sec has a brilliant and intense golden yellow in color, richly expressive, it opens with aromas of dried fruit, almonds and hazelnuts, followed by grilled and toasted aromas. After a few years, the nose will evolve towards deeper notes of honey and pine resin. Full-bodied and generous, it is a rich wine with a rounded feel. The richness of the Demi-Sec naturally calls for sweet dessert dishes and will add depth and flavours to such desserts, especially pastries.
